Pesto is a great way to get your daily greens and healthy oils.
Did you know that increasing your intake of healthy oils can decrease your unwanted cholesterol? It’s PESTO TIME!!
Ingredients
- 8 cups of greens – I used radish tops because they are
edible but prickly, so they go very nicely blended up
- 2 garlic cloves/ 2 tsp minced garlic
- 1/2-1 cup basil leaves & stalks – the more the better!
- 3/4 cup roasted nuts/seeds
- 3/4 cup olive oil
- 2 tablespoons of lemon juice
- 1 cup freshly grated parmesan cheese
- A couple of grinds salt & pepper
Method
- Toss the garlic, greens, basil, nuts/seeds, oil and lemon juice in a food processor and pulse until finely chopped.
- Stir in the cheese
- Season with salt & pepper
Add to pasta, pizza or salad sandwiches or spread onto bread to dunk into soup.
